Time for making the first of the Christmas cakes. 1000g of mixed dry fruit, heavy on the cherries and ginger; 10 ml of grand marnier, rind of a lemon and an orange, juice of one orange, nutmeg, mace, cinnamon, French 4 spice, and salt; Mix and soak for a day or two. Then add 5 eggs, 200g of ground almonds, 60g of tapioca flour, potato flour, millet flour, tsp of Psyllium. 150g nuts. (Walnuts are my favorite), 250g of oil (coconut and olive), and one small grated apple. Ta da! Yum!
